Last night I made one of my signature dishes and it is a great WIC meal so I wanted to share. Please adjust however it will work best for you! This recipe made three pretty big meals, two itty bitty meals, and lots of leftovers!
I started by cutting up some steak, I have used chicken also in the past. This is an unnecessary addition, but my family loves it. I put just a little bit of oil in the pan and brown the steak, then I added onion slices, fresh mushrooms, zucchini, and yellow squash. Add whatever seasonings you prefer, I used seasoning salt and teriyaki glaze. We put everything over rice and it is delicious!
As always, with most of my recipes, you can add or remove whatever you like, most of the ingredients are from WIC coupons (fruits and vegetables) and if there aren't as many of you, you obviously don't need to make as much. The great thing about this dish is you can make it oriental like I have done, or you can switch it up and add Italian seasoning to make it an Italian dish over pasta, or you could have just the vegetables and steak on their own!
